Pineapple-Strawberry Angel Food Cake

This is a recipe I got from Weight Watchers long long ago and I still make it to this day because its absolutely yummy, especially for those nice warm days, super easy and not a hazard to your waistline.

So now I know I said that I didnt like out of box baking but this is kind of a Semi-Homemade recipe (if you watch Food Network, Sandra Lee). Its so easy you just do it by memory, no reading required!

You just buy a box of the Angel Food cake mix and a can of crushed pineapple, preferably the no sugar added 100% pineapple juice rather then heavy syrup, and a carton of fresh strawberries. The amount of fruit is totally up to you.

-Open the box pour the mix in to the bowl
-Empty the whole can of pineapple in to the mix juice and all along with some washed and sliced strawberries
-Mix
-and wallah!....

Pour it in to a bundt cake pan or which ever you please.

Cook at 350 degrees for about 40 minutes. Make sure to put it on the bottom rack of the oven. Take out when the top is golden and not jiggly in the middle when you touch it. Pull out and let cool!

** Im sure you can also add your own favorite fruit if you wanted.

This cake is pretty sweet. If your not a sweet person then substitute some of the pineapple juice for some water, equal amounts. FYI...if your adding other fruit then dont sub water for juice the other fruit will absorb the sweetness while cooking.

Then, of course I have to fatten it up a little and put whipped cream on it with some more sliced strawberries. Then go out on the porch with a slice and a yummy mimosa and read a magazine! Yay....I will post a picture of the cake in a bit!

Gotta go check up on my pork roast in the crock pot!
